Tomato and strawberry are closer cousins than most people realize, and this riff on the Pegu Club—the classic gin sour—puts that kinship to work: Moletto tomato gin's soft umami note sneaks in just enough to open up the subtle savory black olive character in the agricole-style Tso'ok rum, while lush strawberry and bittersweet Cappelletti aperitivo pull everything back toward the sun. The result is dry, crisp, and juicy—the kind of bright, savory-edged cooler built for long summer evenings, when one coupe has a way of becoming two.

¾ ounce Moletto tomato gin
¾ ounce Tso'ok Ron Serrano rum
½ ounce Giffard Fraise de Bois strawberry liqueur
¼ ounce Cappelletti aperitivo
¾ ounce fresh lime juice
¼ ounce simple syrup

Shake all the ingredients with ice, then strain into a chilled coupe. No garnish.
