Pineapple Express
The recent proliferation of nonalcoholic proxy ingredients has made it easier for us to make drinks that are as complex as their fully proofed counterparts. In this new addition to our 2025 Dry January offerings, Matthew Belanger uses NA tequila, NA coffee liquor and Seedlip’s aromatic Spice 94 to mimic the flavors of the ever-popular espresso martini, with some added body from pineapple juice.
Pineapple Express
¾ ounce Seedlip Spice 94
¾ ounce Ritual Zero Proof Tequila
1 ounce Lyre's Coffee Originale NA coffee liqueur
1 ounce cold brew concentrate
1 ounce pineapple juice
½ ounce Demerara Syrup (see Note)
Garnish: 1 pineapple slice
Shake all the ingredients with ice, then strain into a chilled coupe. Garnish with the pineapple slice.
Note: To make Demerara Syrup, combine 2 parts demerara sugar and 1 part water in a sauce pan and cook over medium heat, stirring constantly, until the sugar has dissolved. Transfer to a storage container and refrigerate until ready to use, up to 2 months.
