Sherry Cobbler

The Sherry Cobbler is one of the earliest examples of a true summer cocktail: long, cold, and built for crushed ice. Amontillado sherry provides both structure and acidity, while muddled orange slices bring sweetness, bitterness, and bright aromatics. What makes this drink truly shine in warm weather, though, is its adaptability—topped with a heap of seasonal fruit and fresh mint, it becomes a canvas for whatever the market (or your backyard) is offering. Whether elegantly garnished or joyfully overdone, the Cobbler is endlessly riffable, deeply refreshing, and a perfect excuse to play with what’s in season.

3 orange slices
1 teaspoon Cane Sugar Syrup (see Note)
3½ ounces amontillado sherry
Garnish: 1 orange half wheel, 1 mint bouquet, and berries

In a Old-Fashioned or Collins glass, muddle the orange slices and syrup. Add the sherry and stir briefly. Top with crushed ice and stir a few times to chill the cocktail. Top with more crushed ice, packing the glass fully. Garnish with the orange half wheel and mint bouquet and serve with a straw.

Note: To make Cane Sugar Syrup, combine 2 parts unbleached cane sugar with 1 part water in a blender and blend until the sugar has dissolved.
