Since Tyson Buhler first introduced the drink at Death & Co NYC in 2017, the Spyglass has remained a constant back-pocket cocktail for our bartenders and has been spotted on menus around the country. A Martini at heart, it builds off the unlikely-yet-seamless pairing of fennel and chocolate.
¼ ounce Krogstad aquavit
½ ounce Dolin dry vermouth
½ ounce Don Ciccio & Figli Finocchietto fennel liqueur
1 teaspoon Marie Brizard white crème de cacao
Garnish: 1 lemon twist
Stir all the ingredients over ice, then strain into a chilled Nick & Nora glass. Express the lemon twist over the drink and discard.
