"I had dinner somewhere—I forget which restaurant—and I was drinking a martini with a caprese salad, and I thought, this would be pretty rad, getting these flavors together in some form. Around that same time Raven Mina had done something with Moletto, a really cool tomato-based gin, so that went in, with basil eau-de-vie alongside it. Fords gin has this subtle, funky, cheesy quality that I always pick up on. No one else really does, apparently, but I’m telling you: Ford’s is slightly cheesy. Then we needed some acidity, which is where the blanc vermouth comes in. And I wanted to tie in a little Chartreuse, because—why not? Who doesn’t like Chartreuse in their drink?" —ER

1 ounce Moletto gin
½ ounce Fords gin
½ ounce Aqua Perfecta basil eau-de-vie
1 ounce Dolin blanc vermouth
1 teaspoon green Chartreuse
1 dash absinthe
Garnish: 1 lemon twist 

Stir all the ingredients over ice, then strain into a chilled Nick & Nora glass. Express the lemon twist over the drink and discard.
