Turtle Power
Seth Hiravy built Turtle Power to give curious drinkers an easy way into sotol and raicilla—two adventurous agave spirits that can scare off anyone who hasn't met them yet. Avocado syrup and coconut liqueur round off the spirits’ rougher edges without taking away what makes them interesting, while pineapple and lime juice keep this colada-inspired drink vegetal and fruity instead of sweet. It's a gateway built for people who didn't know they were looking for one.
Turtle Power
1 ounce Casa Lotos stool
¾ ounce Estancia raicilla
1½ ounces Avocado Syrup (see Note)
1 ounce pineapple juice
½ ounce fresh lime juice
¼ ounce Kalani coconut liqueur
½ dash Chartreuse Élixir Végétal
Garnish: 1 mint bouquet
Combine all the ingredients in a shaker and whip, shaking with a few pieces of ice, just until incorporated. Dump into a tulip and fill the glass with crushed ice. Whip-shake all the ingredients with a small scoop of ice, then strain into a tulip glass filled with crushed ice. Garnish with the mint bouquet and serve with a straw.
Note: To make Avocado Syrup, combine 1 gram citric acid, 1 gram ascorbic acid, 1.5 grams Ticaloid 210S, and 0.1 gram salt in a small bowl. Add 200 grams simple syrup to a blender, then add the dry ingredients and blend until fully dissolved. Add 75 grams avocado and blend until completely smooth and fully incorporated. Bottle and refrigerate until ready to use.
