
Bloody Mary
Few cocktails capture the slow, savory rhythm of a late-summer morning like a Bloody Mary. With ripe tomatoes at their seasonal peak and the sun still strong enough to call for something tall and refreshing, this classic is a celebration of bold flavor and bracing refreshment.Our version leans on our house Bloody Mary mix, a punchy blend of citrus, umami-rich seasonings, and just the right amount of heat from Tapatío. Served tall and ice-cold, it’s a drink that wakes you up and cools you down at the same time.
Bloody Mary
Kosher salt
Lemon wedge
2 ounces vodka
5 ounces Basic Bloody Mary Mix (see below)
Garnish: 1 lemon wedge and 1 olive on a cocktail pick
Rub the lemon wedge along the upper ½ inch of a Collins glass, halfway around the circumference, then roll the wet portion in the salt. Add the remaining ingredients and fill the glass with ice cubes. Garnish with the lemon wedge and olive.

Makes about 6 cups
1,100 grams organic tomato juice (bottled)
180 grams Worcestershire sauce
30 grams Maggi seasoning
72 grams strained fresh lemon juice
72 grams strained fresh lime juice
30 grams Tapatío hot sauce
Place all the ingredients in a bowl and stir to combine. Transfer to a storage container and refrigerate until ready to use, up to 1 week.
