Central Americano

“This one was sort of a 'concept drink' in that I thought of the name first, then decided a molé-flavored take on the Americano—centered around the bitter chocolate notes of Cappelletti aperitivo—would be fitting. Unfortunately I am a fool who does not understand geography, and my team was very quick to remind me that Mexico is not in Central America (indeed it’s part of North America!). Nevertheless, the drink was great and very refreshing: bitter chocolate and coffee notes from the Cappelletti, plus some chile spice and heat from the Alma Tepec pasilla liquor and a touch of cinnamon from the cachaça.” —MB

1½ ounces Cappelletti bitter red Italian aperitivo
½ ounce Alma Tepec pasilla chile liqueur
¼ ounce Avua Amburana cachaça
1 dash Bittermens Xocolatl Molé bitters
3 ounces dry sparkling wine
Garnish: 1 grapefruit crescent 

In a mixing glass, stir all the ingredients (except the sparkling wine) over ice, then strain into a wine glass filled with ice cubes. Top with the sparkling wine and stir briefly. Garnish with the grapefruit crescent.
