Clear Sky
Some flavor combinations are just layups: watermelon and tequila, tomato and watermelon, Fino sherry and tomato. Summer Goff’s Clear Sky stacks all three into a single glass. It's a crushable tequila sour that drinks bright and fruity up front, with a savory, saline finish that keeps you reaching for the next sip. It began as a simple watermelon drink and grew more layered in the tasting room, where a splash of Laurent Cazottes 72 Tomates eau-de-vie and a dash of MSG turned a straightforward sour into something that tastes like the very peak of summer.
Clear Sky
¾ ounce Siembra Valles blanco tequila
½ ounce Banks 5 Island white rum
¼ ounce Laurent Cazottes 72 Tomates
½ ounce Tío Pepe fino sherry
¾ ounce fresh lime juice
¾ ounce 3:1 Watermelon Syrup (see Note)
1 dash MSG Solution (see Note)
Garnish: 1 lime wedge
Shake all ingredients with ice, then strain into a chilled coupe. Garnish with the lime wedge.
Note: To make Watermelon Syrup, combine 83 grams granulated sugar with 250 grams strained watermelon juice and 4.7 grams vodka and whisk until the sugar dissolves. Refrigerate until ready to use, up to 1 week. To make MSG Solution, stir 2 grams MSG (monosodium glutamate) into 10 grams warm water until fully dissolved, then let cool before using.
