Buster Sword
Mike Perez set out to put a smash on the menu and landed on something that, in his words, just screams summertime: shiso, peach, and rye. Buster Sword muddles lemon into a base of Old Overholt, Rinquinquin peach aperitif, and shiso liqueur, then hides the whole beautiful mess inside a julep tin packed with pebble ice. It drinks bright, herbaceous, and refreshing—and, like any good julep, it's stronger than it lets on.
Buster Sword
3 lemon half-wedges (eighths)
1½ ounces Old Overholt rye
½ ounce Rinquinquin peach aperitif
¼ ounce Sidetrack shiso liqueur
½ ounce simple syrup
1 dash Peychaud's bitters
Garnish: 1 mint bouquet
Muddle the lemon wedges in a shaker. Add the remaining ingredients and shake briefly with ice, then dump the full contents into a julep tin and fill the tin with crushed ice. Garnish with the mint bouquet and serve with a straw.
