"Despite Death & Co’s wealth of compendium cocktails (there are more than 3000 recipes in our house database), we found a cocktail hole that we’d yet to fill: a vodka-based drink made with egg white. I wanted to balance our menu with something light, refreshing, and appropriate for the winter/spring transition. I was inspired by Denver’s own Leopold’s Silver Tree vodka, which gives notes of vanilla and citrus and has a smooth, creamy finish. The drink becomes complex with a bright, aromatic Italian bergamot liqueur, complemented by notes of ripe pomegranate from the grenadine. For the base spirit, aged pisco adds a rich texture as well as grape and vanilla flavors. And the verjus brings together the grape element and acidity." —CS

1 ounce Mistral Nobel aged pisco
½ ounce Leopold Bros. Silver Tree vodka
¼ ounce Fred Alkemil Rosolio Bergamotto liqueur
¼ ounce Fusion red verjus
½ ounce grenadine
½ ounce fresh lemon juice
1 egg white
Garnish: 1 orange twist
Dry shake all the ingredients, then shake again with ice. Double strain into a chilled coupe. Express the orange twist over the drink and discard.
