Morning Dove

This cocktail begins with the bones of a Paloma—tequila, grapefruit, lime, and soda—but takes a sharp turn into darker territory. Arette reposado brings gentle oak and roundness, while Don’s Mix (a Tiki-born blend of grapefruit juice and cinnamon syrup) reinforces the citrus core. Aperol keeps the bittersweet lift you expect, but a touch of coffee amaro quietly reshapes the drink’s profile, adding roasted depth and a subtle herbal edge that lingers beneath the brightness. It drinks like a sun-soaked highball at first glance, but the coffee undertone gives it unexpected gravitas—a Paloma with edge.

1½ ounces Arette reposado tequila
¼ ounce J. Rieger Caffé Amaro
¼ ounce Aperol
1½ ounces Don's Mix (2 parts grapefruit juice to 1 part cinnamon syrup)
¾ ounce fresh lime juice
¼ ounce simple syrup
1 dash Bittermens Elemakule Tiki bitters
1 dash Angostura bitters|
Cold seltzer
Garnish: 1 grapefruit crescent

Short shake all the ingredients (except the seltzer) with ice for about 5 seconds, then strain into a Collins glass. Fill the glass with ice cubes and top with the soda. Garnish with the grapefruit crescent.
