Fresh Gimlet

The Gimlet is proof that a simple cocktail can still spark debate. The original, dating back to the British navy, was made with lime cordial—sweet, concentrated, and designed for long sea voyages. Our “fresh” version swaps cordial for fresh lime juice and simple syrup, giving the drink a brighter, more vivid character—essentially a gin daiquiri. Both versions share the same appeal: a bracing mix of gin and lime that’s crisp, balanced, and easy to love. In late summer, the Gimlet shines as the perfect in-between drink—refreshing enough to cool you down, but structured enough to carry you through the evening.

2 ounces London dry gin
1 ounce fresh lime juice
¾ ounce simple syrup
Garnish: 1 lime wedge

Shake all the ingredients with ice, then strain into a chilled coupe. Garnish with the lime wedge.
